The Brotherhood brings together restaurateurs and iconic chefs such as Antonio Cosmen, Pepa Muñoz, José Alberto, Juan Pozuelo, Joaquín Felipe, Carmen Carro, Fran Vicente, Miriam Hernández and Mara Verdasco, who strive to maintain the essence of this traditional dish in Madrid cuisine.

Within the framework of the International Tourism Fair (FITUR), the Gastronomic Brotherhood of Cocido Madrileño was officially presented at the stand of the Community of Madrid, highlighting the Madrid stew as a gastronomic and cultural heritage of the region. During the event, the Mayor of Madrid, José Luis Martínez-Almeida, was distinguished as Honorary Councilor of the Brotherhood, in recognition of his continued support for the promotion of Madrid gastronomy and his special appreciation for this emblematic dish.

The event, led by Nacho Sandoval, Senior Brother of the Brotherhood, brought together prominent representatives of the Madrid gastronomic sector and local authorities, who celebrated the creation of this new initiative aimed at preserving and spreading the tradition of Madrid stew.

Objectives of the Brotherhood

The main mission of the Cofradía del Cocido Madrileño is to promote the history, variants and cultural importance of Madrid stew, as well as positioning Madrid as a prominent destination for gastronomic tourism. Among its activities are meetings, workshops and promotional actions that seek to highlight the quality and tradition of this dish in haute cuisine.

Recognitions and Sponsorship

One of the highlights of the event was the sponsorship of the Cofradía Gastronómica del Cocido Madrileño by Miguel Ángel de Dios, Senior Brother of the Cofradía del Desarme de Oviedo, in an emotional gesture that symbolized the union of culinary traditions.

In addition, the appointment of Honorary Brothers was carried out, a recognition granted to key institutions and personalities for their outstanding work in promoting national gastronomy. Among those honored were José Luis Álvarez Almeida, Vice President of Hostelería de España; Rogelio Enríquez, President of the Madrid Academy of Gastronomy; Nino Redruello, Vice President of FACYRE; Eduardo Casquero, President of ACYRE; José Antonio Aparicio, President of Hostelería Madrid; and Almudena Maíllo del Valle, Councillor for Tourism of the Madrid City Council.

This recognition highlights the commitment and effort of each of them in the preservation and promotion of Madrid's culinary wealth, with the Madrid stew as a symbol of cultural and gastronomic identity.

One of the highlights of the event was the recognition of Don José Luis Martínez-Almeida as Honorary Councillor of the Brotherhood. In the words of Nacho Sandoval, "the Mayor's constant support for Madrid's culture and traditions, together with his firm commitment to the promotion of local gastronomy, deserves this honour. The Madrid stew is not just a dish, it is a symbol of our identity."

The Mayor expressed his gratitude, highlighting the importance of initiatives such as this to exalt Madrid's culinary legacy and attract national and international interest in its gastronomic wealth.

Tasting of Madrid Stew

The presentation concluded with a tasting of the traditional Madrid stew, prepared by the member restaurants of the Brotherhood, who demonstrated the richness and diversity of this dish that is emblematic of Madrid cuisine.
